Vegetable Sausage Soup


Serves 10

1 can (15 oz.) Libby’s® Sliced White Potatoes (drained and diced)
1 lb hot or sweet italian sausage
1 c green pepper (diced)
1 c onion (diced)
1⁄2 tsp dried basil
1⁄2 tsp dried oregano
1⁄2 tsp ground marjoram
2 can (14 oz.) chicken broth
2 can (14.5 oz.) stewed tomatoes
parmesan cheese (optional)
salt and pepper to taste

Remove sausage from casing and place in large pan; add onion, green pepper, and spices. Cook over medium heat until thoroughly cooked; breaking sausage up with a spoon into small bite-sized chunks.

Add chicken broth and stewed tomatoes (breaking up tomatoes into small chunks). Add Libby’s® Cut Green Beans, Libby’s® Sliced Carrots, and Libby’s® Sliced White Potatoes; bring to boil. Reduce heat to low and simmer for 15 minutes, stirring occasionally.

Spoon soup into bowls and top with parmesan cheese, if desired.
