Vegan Creamed Corn

Serves 4

1 c unsweetened lactose-free milk
1⁄2 small shallots (diced)
2 tsp sugar
1⁄2 tsp salt
2 tsp vegan butter
2 tsp flour
pepper, chili powder, cayenne pepper (to taste)

Sauté shallot in cooking oil until translucent.

Drain Libby's® Whole Kernel Sweet Corn and transfer half into food processor. Pulse until just smooth. Reserve for later.

Add remaining Libby's® Whole Kernel Sweet Corn to skillet with shallot and caramelize over medium heat for 5-10 minutes.

Once caramelized, add in lactose-free milk, salt, and sugar. Bring to simmer and heat for about 10 minutes, stirring occasionally.

Meanwhile, in small saucepan over low heat, melt the vegan butter. Stir in flour, forming a roux.

Pour roux and reserved pureed corn into the skillet. Mix everything together, stirring frequently.  Turn up the heat to thicken the mixture.

Sprinkle with pepper, chili powder, and cayenne.
