Turkey Bolognese with Peas and Carrots


Serves 1-2

1 1⁄2 tsp olive oil
1 tbsp butter
3 oz ground turkey
1⁄4 c onion (chopped)
1⁄4 c celery (chopped)
1⁄4 c whole milk
1⁄2 c store bought marinara sauce (or homemade)
1 tsp fresh parsley (chopped)
1 tbsp fresh basil (chopped)
parmesan (to taste)
pinch of salt
pinch of freshly ground black pepper

In sauté pan, heat the oil and the butter.

Add onions and celery and cook for 3 minutes.

Add ground turkey and cook for 10 minutes.

Add parsley, salt and pepper. Stir and cook for 30 seconds.

Add milk and cook for 2 minutes.

Add marinara to turkey mixture and continue cooking for 10 minutes.

Add Libby’s® Sweet Peas and Diced Carrots (single serving) and basil.

Continue cooking for 2 more minutes.

Sprinkle with grated parmesan, if desired.

Serving Note: Serve your Turkey Bolognese on mini slider buns, a sandwich roll or over “little ears” pasta.
