Spicy Chicken Lettuce Wraps

Serves 6

1 can (14.5 oz.) Libby’s® Cut Green Beans (drained and cooked)
1 lb chicken breast (cooked; diced; about 2 1/3 cups)
2 large scallions (diced; about ¼ cup)
1⁄3 c almond slivers
1⁄3 c plain nonfat Greek yogurt
1⁄3 c mayonnaise made with olive oil
2 tsp sriracha sauce
1⁄4 tsp ground ginger
12 romaine lettuce leaves
sriracha sauce (for serving)

Mix together chicken, green beans, corn, scallions and almonds in large bowl.

Mix together yogurt, mayonnaise, 2 teaspoons Sriracha and ginger in separate bowl. Gently fold yogurt sauce into chicken mixture until well incorporated.

Scoop about ⅓ cup of chicken mixture onto romaine lettuce leaf. Repeat until all twelve leaves are filled. Drizzle with extra Sriracha sauce, if desired, and serve.
