Spiced and Stuffed Samosa “Baked” Potatoes

Serves 6

3 small potatoes
1 tsp hungarian smoked paprika
1 tsp mild curry powder
1 tsp ground ginger

Stab potatoes multiple times on each side and microwave for 3 minutes.

Cut potatoes in half and place them brown-side down into silicone baking cup. (If you want it to sit better, you can cut the ends off the brown side so it’ll lay flat in the cup!) Microwave for another 2.5 minutes.

Stab fork into middle of each potato and turn them a couple times to hollow out center. Make sure you don’t hollow out the whole thing so that it’ll be able to support the contents! Spoon the contents into bowl.

Microwave peas, corn and green bean Libby’s® Vegetable Cups for 25-30 seconds.

Add sweet peas, corn and green bean Libby’s® Vegetable Cups into bowl.

Add smoked paprika, curry powder and ground ginger. Mix and spoon the contents into potato skins.

Microwave for 30 seconds and serve hot.
