Southern Spicy Corn Cups

1 tbsp butter
2 oz cream cheese
1⁄3 c red bell pepper (diced)
1 small serrano pepper (seeded and diced)
1⁄2 tsp chili powder
1⁄4 tsp paprika
1⁄2 c cheddar cheese (shredded)
sea salt (to taste)
freshly cracked pepper (to taste)

Heat medium-sized skillet over medium heat and add butter and cream cheese. Stir until melted, about 1-2 minutes.

Add Libby's® Whole Kernel Sweet Corn Vegetable Cups, bell pepper, and serrano pepper and cook until heated through. Stir in chili powder and paprika, then add cheddar cheese and stir until melted, about 1-2 minutes more.

Season with salt and pepper and serve immediately, or spoon back into cups and store in the fridge until ready to serve. To reheat, microwave on high for 30-60 seconds, or until bubbly and hot.
