Pea and Green Bean Rice Medley

Serves 4 

2 c cooked white or brown rice
1⁄4 c uncooked (broken angel hair pasta)
2 olive oil
1 lemon juice
1⁄2 tsp dried thyme
salt and pepper to taste
chopped parsley for garnish (optional)

Heat oil and pasta on high for 1 minute until browned. 

Remove from heat and add rice, thyme and lemon juice.

Return to stove heat thoroughly over low-medium heat for 3 to 5 minutes. Stir frequently. 

While rice heats, microwave peas and green bean cups for 23-30 seconds.

Stir peas and vegetables into rice. Salt and pepper to taste.

Serve garnished with parsley, if desired.
