Mixed Veggie Fried Rice


Serves 4

1 tbsp sesame oil
2 eggs (lightly beaten)
2 minced garlic cloves
3 c cooked brown rice
6 scallions (about ¼ c.) (finely chopped; white and light green parts)
2 tbsp low sodium soy sauce

Have all ingredients prepped and ready by the stove.

Heat oil in a wok or large skillet over medium high heat. Add eggs and cook 30 seconds, stirring constantly and breaking up into little pieces. Add garlic and cook 30 seconds, stirring constantly. Mix in rice and scallions; cook 1 minute, stirring constantly. Mix in soy sauce and vegetables. Cook 2 minutes, or until veggies are heated through; stirring often.

Serve warm.
