Mexican Street Corn Style Air Fryer Potatoes

Savory, crispy and the perfect snack. Behold Mexican Street Corn Style Air Fryer Potatoes, made with Libby's Sliced White Potatoes. Simply mix a few ingredients and throw these in the air fryer for a hit of flavor. You can also add, or substitute, the cotija cheese with nutritional yeast for the additional flavor. Ingredients

  • 3 cans (15 oz.) Libby’s Sliced White Potatoes, drained and patted dry

  • 1/4 cup mayonnaise

  • 2 tablespoons chili powder

  • 1 tablespoon sea salt

  • 2 teaspoons black pepper

  • 1/2 cup cotjia cheese (finely grated)

  • cooking spray

  • Optional addition or substitute: nutritional yeast​

  • 3 cans (15 oz.) Libby’s Sliced White Potatoes, drained and patted dry

  • 1/4 cup mayonnaise

  • 2 tablespoons chili powder

  • 1 tablespoon sea salt

  • 2 teaspoons black pepper

  • 1/2 cup cotjia cheese (finely grated)

Instructions

1. In large mixing bowl, add potatoes, mayo, chili powder, salt, pepper, and cotija cheese; stir gently until thoroughly coated.

2. Spray air fryer basket with non-stick cooking spray. Layer potato slices in basket, spraying each layer with light coating of cooking spray before adding the next.

3. Cook at 360°F for 20 minutes, stirring halfway through. Carefully remove from air fryer basket and serve immediately!
