Mediterranean Meatloaf


Serves 6

1 can (14.5 oz.) diced tomatoes with onion and herbs
1 1⁄2 lb ground beef
2⁄3 c prepared italian–seasoned bread crumbs
2⁄3 c red onion (chopped)
3 garlic cloves (minced)
1⁄2 tsp salt
1⁄2 tsp pepper
2 eggs

Preheat oven to 350°F.

In large mixing bowl, mix ground beef, bread crumbs, onion, garlic, salt, pepper and eggs. Add peas and carrots; mix well. Place mixture in 9x13–inch baking dish and shape into a loaf.

Bake 30 minutes.

Spoon diced tomatoes over top of meatloaf and bake an extra 30 minutes. Let stand for at least 5 minutes before serving.
