Lunchbox Tacos

Serves 1 

1 pack large burrito size flour tortillas (10 to 12 in.)
1 (4 oz.) Libby’s® Vegetable Cup (sweet corn, sweet peas, peas and corn, or carrots – chef's preference)
2 oz black beans
2 oz cubed chicken
2 oz shredded cheese
2 tbsp salsa or dressing

Using a 3 inch circle cutter, cut out mini tortilla rounds from the large flour tortillas. Depending on your child's age and eating habits, put 4 to 6 mini tortillas in each lunchbox.

Pack 2 to 4 ounces of each taco topping and 2 to 4 tablespoons of salsa or dressing.

To keep the tacos from getting soggy in the lunchbox, assemble tacos just before eating.
