Lunch Box Pasta Salad


Serves 4

6 oz whole wheat penne or rotelle pasta (uncooked)
1 c cherry tomatoes (halved)
1⁄2 c celery (sliced)
1⁄3 c red onion (chopped)
1⁄3 c balsamic vinaigrette (low-fat; prepared)
3 tbsp parmesan cheese (grated)

Cook pasta according to package directions; drain and cool to room temperature.

In large bowl, combine all ingredients except vinaigrette and cheese. Mix gently to combine ingredients evenly. Add vinaigrette; toss to distribute evenly. Add cheese; toss gently.
