Hamburger Stroganoff


Serves 4

1 tbsp vegetable oil
1 lb ground beef
1 bag (10 oz.) sliced mushrooms
1 c low-fat sour cream
1⁄2 tsp salt
1⁄4 tsp pepper
1 package (1 lb.) linguine or egg noodles (cooked)

In a large skillet, heat oil over medium heat. Add beef and cook over medium heat, stirring and breaking up with a spoon, until browned.

Remove from skillet with slotted spoon.

Add mushrooms to skillet; cook over medium-high heat until browned.

Return beef to skillet, stir in sour cream, peas, salt and pepper. Bring to a simmer.

Serve over noodles.
