Ginger Candied Vegetables


Recipe by Jane Maynard from This Week for Dinner

 Serves 10 to 15

4 tbsp butter
1⁄4 c brown sugar
1⁄2 tsp ground ginger
1⁄4 tsp salt
1⁄4 tsp pepper

Melt butter in a large pot over medium heat.

Once butter is melted, add brown sugar, ginger, salt and pepper. Stir and cook for a few minutes, until sugar crystals are mostly dissolved (about 3 or 4 minutes total).

Add Libby's® Gourmet Whole Baby Carrots, Libby's® Whole Kernel Sweet Corn and Libby's® Sweet Peas; stir and cook until vegetables are heated through. Serve immediately.
