French Style Potato Salad


Serves 4

1⁄3 c pitted niçoise or black olives (roughly chopped)
1 tbsp cider vinegar
1 tbsp fresh lemon juice
1 tbsp olive oil
1 tbsp dijon mustard
1⁄4 tbsp salt
2 tbsp fresh parsley (chopped)
1 clv garlic (minced)
freshly ground black pepper

Gently combine Libby's® Sliced White Potatoes, Libby’s® French Style Green Beans and olives in a serving bowl.

Combine vinegar, lemon juice, olive oil, mustard and salt in small bowl; stir with whisk. Stir in parsley and garlic; season to taste with black pepper. Pour over potato mixture and toss to combine. Serve immediately or store in refrigerator until serving.
