Easy Vegetable Beef Soup

Cook time: 20 minutes

1 can (14.5 oz) petite diced tomatoes (undrained)
1 lb lean ground beef
1 1⁄2 c tomato juice
1 1⁄2 c chicken stock
3⁄4 c onion (diced)
1 tbsp olive oil
1 tbsp butter
1 tsp kosher salt
1⁄2 tsp black pepper
1 bay leaf
1 tsp italian seasoning
1 tsp garlic powder
1⁄4 tsp paprika

Heat butter and oil in large cast iron skillet. Add in diced onion and cook until softened. Crumble up ground beef and brown onion.

Once ground beef is browned, add in all other ingredients. Boil, and then simmer, until flavors combine and everything is heated through.

Taste and season as needed. Serve and enjoy!
