Easy One Pot Taco Stew

1 lb lean ground beef
1 medium sweet yellow onion (diced)
5 c yellow gold potatoes (peeled and diced)
6 c water
2 c low sodium beef broth
1 can medium red chili beans (drained)
1 can (15 oz.) pinto beans
1 can (14.5 oz.) diced tomatoes
1 can (8 oz.) tomato sauce
1 1⁄2 tbsp cumin
1 1⁄2 tbsp ground coriander
2 tsp chili powder
2 tsp garlic powder
1 tsp kosher salt
1 tsp cracked black pepper

Heat large dutch oven over medium-high heat and add ground beef. Sprinkle with salt and pepper and cook, breaking up as it cooks, until no longer pink, around 5 minutes.

Remove from pot with slotted spoon and set aside. Drain and wipe out pot.

Add olive oil and heat to medium, medium-high. Add onions and cook until soft and translucent, around 3 minutes. Add potatoes, followed by water and beef broth, then bring to boil.

Reduce heat to low boil and cook until potatoes are soft, around 10-15 minutes.

Once potatoes are soft, add ground beef back to pot, followed by Libby’s® Sliced Carrots, Libby’s® Cut Green Beans, Libby's® Whole Kernel Sweet Corn, red chili beans, pinto beans, tomato sauce, diced tomatoes, cumin, coriander, chili powder, and garlic powder.

Stir gently to combine and simmer until hot. Serve with your favorite taco toppings!
