Easy Carrot Cake Waffles with Whipped Cream Cheese Topping

Serves 12

4 eggs
2 1⁄2 c plain kefir
1⁄4 c brown sugar
1⁄4 c melted butter
2 tsp vanilla
1 1⁄2 c all purpose flour
1 c whole wheat flour
2 tsp baking powder
1⁄2 tsp baking soda
1 tsp cinnamon
1⁄4 tsp salt
1⁄4 c unsweetened coconut (shredded)
Optional Whipped Cream Cheese Topping
1⁄4 c nonfat Greek vanilla yogurt
4 oz neufchâtel cheese

Mash carrots with fork, or puree in mini food processor.

In medium bowl, whisk together eggs, kefir and sugar. Add carrots, butter, and vanilla; whisk to combine.

In large bowl, whisk together flours, baking powder, baking soda, cinnamon and salt. Mix in coconut.

Add egg mixture to the dry ingredients and stir just until moistened.

Coat preheated waffle iron with cooking spray. Pour 1/2 cup waffle batter onto waffle iron and cook according to manufacturers instructions.

While waffles cook, whip together Greek yogurt and neufchâtel cheese with electric mixer for optional whipped cream cheese topping.

Optional: Top with more shredded coconut, walnuts, pineapple or shredded carrots!
