Cheesy Carrot Casserole with Bread Crumb Topping

Serves 4

1 tbsp butter
1 tbsp flour
1 c milk
4 oz cheddar cheese
1⁄4 c bread crumbs
freshly chopped parsley (to garnish)

Preheat oven to 350 degrees F.

Start making roux. To make roux, you'll heat butter in saucepan on medium heat and then add in flour to form paste/roux.

Slowly add milk and whisk until flour and milk are combined.

Once mixture thickens on medium-low heat, reduce heat to low and add in freshly shredded cheddar cheese.

Place Libby’s® Sliced Carrots into small, oven-safe casserole dish and cover with cheese sauce.

Mix Libby’s® Sliced Carrots and cheese sauce until combined and then top with bread crumbs.

Bake for 25 minutes and then garnish with freshly chopped parsley.
