Baked Succotash


Serves 4

Cook time: 50-60 min.

1 can (12 oz.) evaporated milk
1 c monterey jack cheese (shredded)
2 eggs (beaten)
1⁄4 c onion (diced)
1⁄4 c red bell pepper (diced)
1⁄4 ground pepper
1⁄2 c saltine crackers (crumbled)
1⁄4 c bread crumbs

In large bowl, combine succotash, evaporated milk, cheese, eggs, onion, bell pepper, pepper and crackers. Place in 2-quart casserole dish; sprinkle bread crumbs over mixture.

Bake at 350 degrees for 50-60 minutes. Let stand 5 minutes before serving.

Serving suggestions: If succotash is not readily available, substitute with mixture of Libby's® Whole Kernel Sweet Corn and Libby's® Lima Beans.
