For a delicious and flavorful twist on the classic veggie burger, start by mashing two peeled and boiled potatoes in a mixing bowl. To the mashed potatoes, add a blend of spices—turmeric, red chili powder, and garam masala—as well as minced green chili pepper and minced garlic for extra kick. Incorporate a splash of lemon juice, then fold in a can each of Libby's Whole Kernel Sweet Corn, Libby's Sweet Peas, and Libby's Sliced Carrots, all drained and rinsed. Form the mixture into four patties and cook them in a hot skillet with a tablespoon of vegetable oil, searing each side for about 3 minutes until golden and crispy. Serve the patties on burger buns and top with your choice of lettuce, sliced tomatoes, onions, pickles, pepper jack cheese, and condiments for a satisfying and customizable meal.

Ingredients

  • 2 potatoes (peeled and boiled)

  • 2 teaspoons turmeric

  • 2 teaspoons red chili powder

  • 2 teaspoons garam masala

  • 1 green chile pepper (finely minced)

  • 2 cloves garlic (finely minced)

  • 2 teaspoons lemon juice

  • 1 can Libby's Whole Kernel Sweet Corn (drained)

  • 1 can Libby's Sweet Peas (drained)

  • 1 can Libby's Sliced Carrots (drained and chopped)

  • 4 burger buns

  • optional suggested toppings (lettuce, sliced tomatoes, sliced onions, pickles, pepper jack cheese, condiments of choice)
