So fresh and loaded with flavor for summer! Mix tuna and drained peas with diced red and yellow bell peppers, diced onion, grated carrots and sweet Thai chili sauce. Place on butter lettuce leaves with more sauce for drizzling.​

Ingredients

  • 2 cans (5 oz.) albacure tuna in water (drained)

  • 1 can (15 oz.) Libby's Sweet Peas (drained)

  • 1/2 cup red bell pepper (diced)

  • 1/2 cup yellow bell pepper (diced)

  • 1/2 cup onion (diced)

  • 2 carrots (grated)

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 jar sweet Thai chili sauce

  • butter lettuce leaves

  • 1/2 cup red bell pepper (diced)

  • 1/2 cup yellow bell pepper (diced)

  • 1/2 cup onion (diced)

  • 2 carrots (grated)

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 jar sweet Thai chili sauce

  • butter lettuce leaves

Instructions

  1. Wash lettuce leaves and pat dry with paper towels. Set aside.
  2. In a large bowl add drained tuna and flake with a fork.
  3. Stir in the Libby's Sweet Peas, diced peppers, onion, grated carrots and salt and pepper.
  4. Add 1/2 cup of the sweet Thai chili sauce and stir until well combined.
  5. Spoon mixture evenly on lettuce leaves.
  6. Serve with extra sweet Thai chili sauce for drizzling.
