One Skillet Breakfast Hash

This homemade breakfast is especially convenient because you can use your go-to skillet from start to finish of the recipe. Simply combine one can of our Diced White Potatoes with red onion, bell pepper and garlic, then top off the hash with sunny-side-up eggs. Ingredients
2 tablespoons butter
1 red onion (chopped)
1 red bell pepper (chopped)
1 clove garlic (minced)
1 can (15 oz.) Libby’s® Diced White Potatoes (drained)
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon pepper
4 large eggs
2 tablespoons green onions (chopped)
2 tablespoons butter

Instructions
- Preheat oven to 400ºF. Melt butter in a cast iron skillet over medium. Add onion and bell pepper. Cook for 5 minutes, stirring regularly. Add garlic and cook 2 minutes longer.
- Stir potatoes, thyme, salt and pepper into skillet.
- Make 4 wells in hash. Crack one egg at a time over each well. Transfer to oven and cook for 10-12 minutes, until egg whites are set.
- Garnish with green onions.
