Ingredients
1 cup roasted cashews
2 tablespoons brown sugar
1/2 teaspoon ground ginger
1/2 cup vegetable broth
2 tablespoons rice vinegar
2 teaspoons sesame oil
8 ounces fettuccine
1 carrot (shredded)
1 can (15.0 oz.) Libby’s® Lima Beans (drained)

Instructions
- Add cashews, brown sugar, and ginger to food processor. Pulse until finely chopped. Slowly pour into running processor: broth, soy sauce, vinegar, and oil. Continue to run until sauce is smooth.
- Cook fettuccine according to package directions. Drain and add to mixing bowl. Add carrots and lima beans.
- Pour sauce over noodles, carrots and lima beans; stir until well coated.
