Ingredients
1/2 cup olive oil
1/4 cup lemon juice
1 tablespoon red wine vinegar
1/2 cup sour cream or greek yogurt
1/2 teaspoon garlic powder
1 teaspoon dried mint
salt and pepper to taste
1 can (15.25 oz.) Libby's® Whole Kernel Sweet Corn, drained
1 can (15 oz.) Libby's® Peas & Carrots, drained
1 can (15 oz.) chickpeas/garbanzo beans, drained
1 cucumber, chopped
1/3 cup crumbled feta cheese
1/4 cup minced red onion
4 leaves Romaine lettuce, chopped
2 medium tomatoes, sliced
8 round pitas or gyro bread

Instructions
1. In small mixing bowl, whisk together olive oil, lemon juice, red wine vinegar, sour cream/greek yogurt, garlic powder, and mint. Add salt and pepper to taste.
2. Combine all other ingredients (except for the pita/gyro bread) in large mixing bowl. Add dressing and mix well.
3. Scoop salad into pitas/gyro bread and roll into a wrap.
