Creamy Tuna Mixed Vegetable Tortellini Casserole

Ingredients
1 package family size colored tortellini
2 tablespoons butter
1/2 cup onion (chopped)
1/2 teaspoon smoked paprika
2 tablespoons all-purpose flour
3 cups 2% milk
1 package Mexican cheese blend
1 can (15 oz.) Libby’s Mixed Vegetables (drained and rinsed)
1 pouch (2.5 oz.) tuna in water
For topping: 1 bag snack size sour cream and onion potato chips (crushed)
For topping: 2 tablespoons butter (melted)

Instructions
- Make cream sauce: in a saucepan over medium-high heat melt butter once hot add onion, black pepper and smoked paprika and cook until translucent.
- Sprinkle in flour to coat saucepan, and slowly add in milk and cook until thickened a coat back of a spoon.
- Slowly add mixed vegetables to sauce mixture and heat through.
- Add in cheese and tuna, off heat, at end of cooking.
- Meanwhile bring a pot of water to a boil with salted water. Boil tortellini according to package directions Drain tortellini and add back to pot.
- Add cream sauce mixture to pasta and toss to coat. Transfer to greased casserole dish.
- Melt butter and add to a bowl of crushed potato chips and top over pasta.
- Bake at 350F for 20-25 minutes or until bubbly and hot.
