Creamy Tuna Mixed Vegetable Tortellini Casserole

Ingredients

  • 1 package family size colored tortellini

  • 2 tablespoons butter

  • 1/2 cup onion (chopped)

  • 1/2 teaspoon smoked paprika

  • 2 tablespoons all-purpose flour

  • 3 cups 2% milk

  • 1 package Mexican cheese blend

  • 1 can (15 oz.) Libby’s Mixed Vegetables (drained and rinsed)

  • 1 pouch (2.5 oz.) tuna in water

  • For topping: 1 bag snack size sour cream and onion potato chips (crushed)

  • For topping: 2 tablespoons butter (melted)

  • 1 package family size colored tortellini

Instructions

  1. Make cream sauce: in a saucepan over medium-high heat melt butter once hot add onion, black pepper and smoked paprika and cook until translucent.
  2. Sprinkle in flour to coat saucepan, and slowly add in milk and cook until thickened a coat back of a spoon.
  3. Slowly add mixed vegetables to sauce mixture and heat through.
  4. Add in cheese and tuna, off heat, at end of cooking.
  5. Meanwhile bring a pot of water to a boil with salted water. Boil tortellini according to package directions Drain tortellini and add back to pot.
  6. Add cream sauce mixture to pasta and toss to coat. Transfer to greased casserole dish.
  7. Melt butter and add to a bowl of crushed potato chips and top over pasta.
  8. Bake at 350F for 20-25 minutes or until bubbly and hot.
