9 slices whole wheat Italian or French bread, cubed
2 cans (15 oz.) Libby's Mixed Vegetables, drained
3 stalks scallions/green onions, chopped
1 cup diced ham
2 cups shredded cheddar cheese, divided
1/2 cup grated parmesan cheese
Instructions
Preheat oven 350°F. Coat 13x9-inch (3 quart) baking pan with nonstick cooking spray.
In large bowl, whisk together eggs, milk, basil, salt and pepper. Add bread, mixed vegetables, and scallions/green onions; mix gently until well combined.
Spread half the bread mixture over bottom of pan; sprinkle with ham and 1½ cups cheddar cheese. Top with remaining bread mixture; sprinkle with remaining cheddar cheese and parmesan cheese.
