Cheesy Brunch Casserole

Ingredients
  • 5 large eggs
  • 2 cups milk
  • 2 teaspoons basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 9 slices whole wheat Italian or French bread, cubed
  • 2 cans (15 oz.) Libby's Mixed Vegetables, drained
  • 3 stalks scallions/green onions, chopped
  • 1 cup diced ham
  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup grated parmesan cheese
Instructions
    1. Preheat oven 350°F. Coat 13x9-inch (3 quart) baking pan with nonstick cooking spray.
    2. In large bowl, whisk together eggs, milk, basil, salt and pepper. Add bread, mixed vegetables, and scallions/green onions; mix gently until well combined.
    3. Spread half the bread mixture over bottom of pan; sprinkle with ham and 1½ cups cheddar cheese. Top with remaining bread mixture; sprinkle with remaining cheddar cheese and parmesan cheese.
    4. Bake 45-50 minutes or until set.
