Ingredients
1/4 cup flour
1/4 cup breadcrumbs
1/4 cup sharp shredded cheddar cheese
1 tablespoon paprika
1 tablespoon chopped fresh chives
1/4 teaspoon black pepper
1 can (15.25 oz) Libby's Whole Kernel Sweet Corn, drained
1 large egg, beaten
1/4 cup plain Greek yogurt
1/4 cup mayonaise
2 tablespoons lemon juice
1 teaspoon garlic powder
salt & pepper to taste

Instructions
- In a mixing bowl, stir together flour, breadcrumbs, cheese, paprika, chives, and pepper. Add corn and egg. Mix together until a thicker batter forms.
- Using your hands or a scoop, shape the batter into 8 thin fritters that are about 3 inches wide.
- Preheat air fryer to 370°F for 2 minutes. Lightly spray the air fryer basket with cooking spray to prevent sticking.
- Add fritters to the air fryer and spray the tops with cooking spray. (You may need to work in batches depending on the size of your air fryer.)
- Cook for 8 minutes, flipping the fritters halfway through. Repeat until all fritters are cooked.
- In a small bowl, mix all aioli ingredients together to serve with the fritters for dipping.
