Ingredients

  • 1/4 cup flour

  • 1/4 cup breadcrumbs

  • 1/4 cup sharp shredded cheddar cheese

  • 1 tablespoon paprika

  • 1 tablespoon chopped fresh chives

  • 1/4 teaspoon black pepper

  • 1 can (15.25 oz) Libby's Whole Kernel Sweet Corn, drained

  • 1 large egg, beaten

  • 1/4 cup plain Greek yogurt

  • 1/4 cup mayonaise

  • 2 tablespoons lemon juice

  • 1 teaspoon garlic powder

  • salt & pepper to taste

Instructions

  1. In a mixing bowl, stir together flour, breadcrumbs, cheese, paprika, chives, and pepper. Add corn and egg. Mix together until a thicker batter forms.
  2. Using your hands or a scoop, shape the batter into 8 thin fritters that are about 3 inches wide.
  3. Preheat air fryer to 370°F for 2 minutes. Lightly spray the air fryer basket with cooking spray to prevent sticking.
  4. Add fritters to the air fryer and spray the tops with cooking spray. (You may need to work in batches depending on the size of your air fryer.)
  5. Cook for 8 minutes, flipping the fritters halfway through. Repeat until all fritters are cooked.
  6. In a small bowl, mix all aioli ingredients together to serve with the fritters for dipping.
