Air Fried Garlic Butter Steak and Potatoes

Ingredients
1 pound steak (ribeye, sirloin, strip steak)
1 (15 oz.) can Libby’s Diced Potatoes (drained)
2 tablespoons avocado oil
1/2 teaspoon salt
1/4 teaspoon black pepper
4 tablespoons unsalted butter
2 cloves garlic (minced)
1 tablespoon fresh parsley (chopped)

Instructions
- Preheat air fryer to 400ºF. Slice steak into 1-inch cubes. Discard excess fat.
- Add steak, avocado oil, potatoes, salt and pepper to a medium mixing bowl and stir to coat. Pour into basket of air fryer and spread evenly. Air fry for 8 minutes.
- In the meantime, heat butter in a large skillet over medium heat. Add garlic and sauté for 2 minutes. Turn off heat and stir in parsley.
- Add steak and potatoes to garlic butter sauce and stir to coat. Serve right away.
