Sweet and Smoky Peas


Serves 4

1 can (15 oz.) garbanzo beans (drained and rinsed)
1⁄4 tsp salt
1 1⁄4 tsp cinnamon
1 tbsp smoked paprika
1 tbsp brown sugar
1 tbsp olive oil

Preheat oven to 400 degrees.

Place kitchen towel on baking sheet. Spread drained Libby's® Sweet Peas and garbanzo beans over towel and blot with another towel to dry as much as possible. Remove towels and gently place Libby's® Sweet Peas and beans onto light-colored or stoneware baking sheet. Drizzle with olive oil.

Mix brown sugar, paprika, cinnamon and salt in small bowl. Sprinkle over Libby's® Sweet Peas and beans. Using your hands, gently but thoroughly mix oil and spices into Libby's® Sweet Peas and beans, and spread out in a single layer.

Roast in oven for 35-40 minutes, gently tossing the sheet every 10 minutes to prevent burning. Peas and beans should be crispy when done. Remove from oven, and cool slightly before serving.
