Spicy Sweet Pea Bisque

Serves 4

2 can (15 oz.) Libby’s® Naturals Sweet Peas (drained and rinsed well)
1 tbsp unsalted butter
2 garlic cloves (minced)
2 c low sodium vegetable broth
3⁄4 tsp chili powder
1⁄4 tsp black pepper
1⁄8 tsp salt
1 c low-fat buttermilk
1 sli bacon (crumbled)
1⁄4 c nonfat Greek yogurt

Melt butter in medium pot over medium heat. Add garlic and sauté for 1 minute. Add Libby’s® Naturals Sweet Peas, stir and cook for another minute. Add in broth, chili powder, black pepper and salt; bring to a boil. Reduce to low simmer for 2 minutes then slowly mix in buttermilk. Simmer for another 2 minutes and then remove from stove.

To puree soup, carefully add to blender or food processor (or use immersion blender directly in pot.) Return pureed soup to pot and heat for a few minutes until soup is warm enough to serve.

Pour 1¼ cups of soup into each of four bowls. Top each bowl with 1 tablespoon of Greek yogurt and one-fourth of the crumbled bacon.
