One-Dish Meatloaf, Potato and Vegetable Bake

Cook time: 1 hr.

2 large russet potatoes
1 lb ground beef
1 1⁄2 tsp salt
1⁄2 tsp black pepper
1⁄2 c diced onion
1 egg, lightly beaten
1⁄2 c crushed tomatoes
1⁄2 c crushed saltine crackers
1⁄3 c ketchup
2 tbsp brown sugar
1 tbsp yellow mustard

Preheat oven to 375.

Lightly grease bottom and sides of an 8x8 or 9x9 square baking dish.

Thinly slice potatoes (about 1/8 inch slices) and layer them on bottom of pan, sprinkling each layer with salt and pepper.

In a separate bowl, combine ground beef, salt, pepper, onion, egg, tomatoes, and crushed saltines.

Spread the meat mixture evenly over top of potatoes.

Mix ketchup, brown sugar, and mustard and spread over meatloaf.

Cover with foil and bake for one hour.

When meatloaf is done cooking, microwave your Libby's® Vegetable(s) of choice and drain liquid. Spread vegetables across top of meatloaf.

Slice and serve!
