1 tablespoon butter
1 onion, chopped
1 pound lean ground beef
2 cans (15 oz.) Libby's Mixed Vegetables, drained
1 can (28 oz.) petite diced tomatoes with liquid
2 cups tomato juice
2 cups beef stock
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
1 teaspoon garlic powder
1/4 teaspoon paprika
Instructions
1. In large pot, heat butter over medium-high. Add onion and ground beef. Break up meat and cook until no longer pink, about 5 minutes.
2. Add all remaining ingredients to pot. Stir together, bring to a boil, then reduce heat to simmer. Cook 15 minutes.
