Creamy Potato Carrot Mash

1 tsp kosher salt
3 oz cream cheese (softened)
1⁄2 c heavy cream
3 tbsp butter (softened)
1 tsp salt

Place potatoes into large pot and cover with water (1 inch over potatoes). Add salt and bring to boil. Reduce heat to medium and boil for 15 minutes. Add carrots to water and continue cooking for additional 5-10 minutes, or until potatoes are tender. Drain and return to pot.

Meanwhile, heat cream and butter in small saucepan over medium heat until butter has completely melted.

Add cream cheese, cream and butter mixture, and salt to potatoes and beat with electric mixer until smooth. For extra creaminess, process through a food mill.
