Cowboy Caviar


Recipe by Britney Rule from Grain Crazy 

Serves 12 

For Dressing:
1⁄4 c olive oil
2 tsp salt
1⁄2 tsp pepper
2 tsp cumin
1 tsp granulated garlic
1⁄4 tsp minced garlic
juice from 1 lime
2 tbsp chia (optional)
For Salad:
2 can beans (white, black, garbanzo, or black-eyed peas; drained and rinsed)
6 roma tomatoes (chopped)
1⁄2 c cilantro (chopped)
2 avocados (chopped)
6 green onions (cut up small)
1 1⁄2 c brown rice, buckwheat, and quinoa (optional)
15 sli jalapeno peppers

Mix all ingredients for dressing together. Set aside.

Mix Libby’s® Whole Kernel Sweet Corn, vegetables, beans, and rice mixture together. Then gently stir in dressing.

Allow vegetables, rice, and beans to sit to pick up flavors of dressing.

Serve at once or put in air tight container in the fridge.
