Brown Butter Green Beans with Garlic Almond Bread Crumbs

Serves 4-6

2 tbsp unsalted butter
1⁄2 c slivered almonds
1 clv garlic (minced)
1⁄2 c panko bread crumbs
lemon zest (from one lemon)
6 tbsp olive oil
1⁄4 tsp salt
1⁄4 tsp black pepper

Heat skillet over medium heat. Add 2 tablespoons of butter (unsalted), letting it melt and brown. Lightly toast almonds in skillet over medium heat. Let almonds cool, then transfer to a food processor or blender and grind to the consistency of breadcrumbs.

Add 2 tablespoons of olive oil in a skillet over medium heat. Add almonds, breadcrumbs, garlic and lemon zest and cook. Stir constantly and then remove.

Add 2 tablespoons of butter to another skillet and let it melt and brown. Once butter is brown, add Libby’s® Cut Green Beans to the skillet and toss them with salt and pepper. Stir constantly to cover all beans with butter. Add the breadcrumb mixture and stir.

Remove to serving dish. Top with more lemon zest.
