Black Bean & Corn Salad

Ingredients

  • 1 vegetable cup (4 oz.) Libby's Whole Kernel Swet Corn, drained

  • 1 can (15 oz.) black beans, drained

  • 1 cup prepared pico de gallo

  • plantain chips (for serving)

Instructions

Combine all ingredients in large bowl. Divide into lunchboxes and pack along with plantain chips and assorted fruit.
