Ingredients

  • 1 cup roasted cashews

  • 2 tablespoons brown sugar

  • 1/2 teaspoon ground ginger

  • 1/2 cup vegetable broth

  • 2 tablespoons rice vinegar

  • 2 teaspoons sesame oil

  • 8 ounces fettuccine

  • 1 carrot (shredded)

  • 1 can (15.0 oz.) Libby’s® Lima Beans (drained)

  • 1 cup roasted cashews

  • 1/2 teaspoon ground ginger

  • 1/2 cup vegetable broth

  • 2 tablespoons rice vinegar

  • 2 teaspoons sesame oil

  • 8 ounces fettuccine

  • 1 carrot (shredded)

  • 1 can (15.0 oz.) Libby’s® Lima Beans (drained)

Instructions

  1. Add cashews, brown sugar, and ginger to food processor. Pulse until finely chopped. Slowly pour into running processor: broth, soy sauce, vinegar, and oil. Continue to run until sauce is smooth.
  2. Cook fettuccine according to package directions. Drain and add to mixing bowl. Add carrots and lima beans.
  3. Pour sauce over noodles, carrots and lima beans; stir until well coated.
