Mediterranean Succotash Side
This refreshing pearl couscous salad is a perfect blend of textures and flavors. The couscous is tossed with tender lima beans, sweet corn, juicy tomato, and creamy mozzarella, all brought together with a bright, zesty dressing of lemon, basil, and olive oil. Ingredients
1 cup plain pearl couscous
1/4 cup olive oil
2 tablespoons lemon juice
1 teaspoon dried basil
1/2 teaspoon salt
1 can (15. oz.) Libby’s® Lima Beans (drained)
1 can (8.5 oz.) Libby’s® Whole Kernel Sweet Corn (drained)
1 tomato (diced)
4 ounces fresh mozzarella (diced)
1 cup plain pearl couscous

2 tablespoons lemon juice
1 teaspoon dried basil
1/2 teaspoon salt

1 tomato (diced)
4 ounces fresh mozzarella (diced)
Instructions
- In a medium pot, bring 1 ½ cups water to a boil. Stir in pearl couscous. Cover with lid; reduce heat to low and simmer 8-10 minutes, stirring occasionally. Drain any water remaining and rinse with cold water. Set aside to cool.
- In a mixing bowl, whisk together oil, lemon juice, basil and salt until well combined.
- Add to bowl cooled couscous, lima beans, corn, onion, tomato, and mozzarella. Gently mix until combined.
- Refrigerate for at least 1 hour to let flavors develop.
