Ingredients

  • 1 cup plain pearl couscous

  • 1/4 cup olive oil

  • 2 tablespoons lemon juice

  • 1 teaspoon dried basil

  • 1/2 teaspoon salt

  • 1 can (15. oz.) Libby’s® Lima Beans (drained)

  • 1 can (8.5 oz.) Libby’s® Whole Kernel Sweet Corn (drained)

  • 1 tomato (diced)

  • 4 ounces fresh mozzarella (diced)

  • 1 cup plain pearl couscous

  • 1/4 cup olive oil

  • 2 tablespoons lemon juice

  • 1 teaspoon dried basil

  • 1/2 teaspoon salt

  • 1 can (15. oz.) Libby’s® Lima Beans (drained)

  • 1 can (8.5 oz.) Libby’s® Whole Kernel Sweet Corn (drained)

  • 1 tomato (diced)

  • 4 ounces fresh mozzarella (diced)

Instructions

  1. In a medium pot, bring 1 ½ cups water to a boil. Stir in pearl couscous. Cover with lid; reduce heat to low and simmer 8-10 minutes, stirring occasionally. Drain any water remaining and rinse with cold water. Set aside to cool.
  2. In a mixing bowl, whisk together oil, lemon juice, basil and salt until well combined.
  3. Add to bowl cooled couscous, lima beans, corn, onion, tomato, and mozzarella. Gently mix until combined.
  4. Refrigerate for at least 1 hour to let flavors develop.
