Classic Double Cheese Green Bean Casserole

Ingredients

  • 3 tablespoons butter

  • 1 small yellow onion, diced

  • 8 ounces fresh Bella Mushrooms, diced

  • 1 tablespoon all purpose flour

  • 2 tablespoons minced garlic

  • 1/4 cup chicken stock

  • 1 cup whipping cream

  • 1 can (10.5 oz.) cream of mushroom soup

  • 1/2 teaspoon black pepper

  • 1 teaspoon ground allspice

  • 1/2 teaspoon ground thyme

  • 1/2 cup grated parmesan

  • 1 cup shredded Monterey jack cheese

  • 3 cans (14.5 oz each) Libby's French Style Green Beans, drained

  • 1 1/2 cup crispy onions

Instructions

  1. Heat oven to 350°F.
  2. Melt butter in a large skillet on medium heat. Add onions and mushrooms; cook 5 minutes. Mix in flour and garlic, stir until it begins to thicken.
  3. Pour in stock and cream. Add soup, black pepper, allspice, thyme, and both cheeses. Continuously stir until combined. Mix in green beans until well coated.
  4. Add green bean mixture to a 2-quart casserole or glass baking dish and top with crispy onions. Bake for 25 to 30 minutes, until onions are golden brown.
